Deoxynivalenol
(DON) belongs to the trichothecenes, a family of closely
related compounds produced by several Fusarium
species. DON is also called vomitoxin, because intake of
food contaminated with DON can result in vomit and nausea.
The immunosuppressive activities are the other negative
properties of the intake of DON contaminated food. In
Europe, it is strongly advised to maintain the Maximum
Levels for DON at 500 ppb for food and at 750 ppb for food
and food components that still have to be processed. The DON
ELISA can be applied for screening on the presence of DON in
cereals, food, feed and silages. In this ELISA an antiserum
is used that does not show cross-reactivity with
15-acetyl-DON and only for 97% cross-reacts with
3-acetyl-DON. This means that the overestimation of the DON
concentration in a sample is 10% maximally as the
3-acetyl-DON concentration in a sample is not higher than
10%. For most matrices a detection limit down to 50 ppb can
be reached. For samples of beer a detection limit down to 10
ppb can be reached. |
